SINCE THEY WERE CHILDREN…

…the Moussalli brothers have been in the kitchen with their mother, watching and learning from her as they grew up. After years of talking with their long-time friends Jonathan & Claire Fowler about how they “really should open a restaurant” in their hometown, they’re finally in a place to make it happen. Between the three brothers, they’ve built impressive culinary experiences in locations ranging from right here in Edwardsville to Texas, California and even Thailand. Head Chef Antoine Moussalli helped make Andria’s Steakhouse in Edwardsville an institution under the ownership of Craig Tarpoff.

When Craig showed interest in retiring, Antoine, Jonathan and Claire brought the family back together, bringing Andre and Christian back to Edwardsville, where they created the next chapter of this phenomenal restaurant. Welcome to a reunion of family and friends. Welcome to the dreams they had in their youth. This is a special place and we want to share it with you.

We’re a farm-to-table steakhouse offering Niman Ranch Certified Angus Beef steaks that are hormone and antibiotic free and cut and trimmed to order. Featuring a wide range of menu options, from vegan and vegetarian dishes to daily fish options, a raw bar and an extensive wine list, you’ll find something for everyone at Moussalli’s Prime.

Our Team

Antoine Moussalli - Executive Chef

Executive Chef Antoine Moussalli brings over 15 years of experience in fine dining. As an Edwardsville native, he has deep roots in the community and an extensive history with the former Andrea’s Countryside Restaurant. Antoine grew his career by working as an Executive Chef at Andrea’s starting in 2002. He has also worked locally as an Executive Chef for 1818 Chophouse and a manager and consultant for Taqueria Z in Edwardsville. He is a 2007 graduate of the New England Culinary Institute in Vermont and completed internships at prestigious restaurants in St. Louis, Missouri, Miami, Florida, and Napa, California.

Antoine is skilled in developing creative menu items and increasing food quality and nutrition by providing non-GMO and gluten-free options. He has extensive knowledge of savory cooking, baking, and pastry techniques. He is most looking forward to working with his brothers, Andre and Christian, and continuing to learn and pick up new skills from Andre. When he isn’t cooking, you can find Antoine spending time with his family, enjoying outdoor activities, trying new restaurants, and spending time at the shooting range and the gym.

Andre Moussalli - Executive Chef

Executive Chef Andre Moussalli started his career in the restaurant industry as a dishwasher at Andria’s Countryside Restaurant when he was sixteen years old. Since then he has worked in some of the most prestigious restaurants in the country, working under the mentorship of Michelin star chefs. Andre brings a vast knowledge of fine dining and experience in a variety of cuisines.

After graduating from the New England Culinary Institute in 2005, he worked with Chef Robert Curry at the Relais & Chateaux property, Auberge du Soleil, for two years. He then worked with his mentor Chef Perry Hoffman, grandson of the founders of the French Laundry, at Étoile restaurant at the Domaine Chandon Winery. At Étoile Andre worked as a Sous Chef for six years, and during this time they achieved and held a Michelin star for five years. He helped develop the garden program there, bringing as much diverse, fresh home-grown ingredients to the table as possible.

Andre partnered with a longtime friend and chef from Thailand to open the Palm Thai Bistro in Fairfield, California, where he spent five years running the kitchen. He spent several months traveling all over Thailand experiencing the culture and regional cuisine, meeting and working with Thai chefs, and learning the language.

Andre is looking forward to his next adventure as a co-founder and Executive Chef for Moussalli’s Prime, where he will have the opportunity to work with his brothers in the family business.

Christian Moussalli- General Manager

As the General Manager for Moussalli’s Prime, Christian oversees all facets of the restaurant’s daily operations. He is an accomplished restaurant manager with over 14 years of experience in his field. He is a former Marketing Associate for Sysco Foods, where he focused on developing relationships with clients and enhancing the customer experience.  Christian also spent 8 years as a restaurant manager for Darden Restaurants in Houston, Texas. In this role, he oversaw operations for restaurants serving over 8,000 guests per week and grossed over $6 million in annual sales. He is a results-oriented leader, focusing on productivity and quality in order to give the customer the best experience possible.  

Christian is an Edwardsville native and spent two years as the General Manager for Andria’s Countryside Restaurant. He is passionate about reviving a local institution and bringing a high-quality dining experience to the Edwardsville area. Christian holds a Bachelor’s Degree in Hospitality Management from the University of Illinois at Urbana-Champaign. Christian lives in Glen Carbon with his wife and two children.  In his free time he enjoys spending time with family, traveling, gardening and experiencing different cuisines.  

Claire & Jonathan Fowler- Managing Partners

Jonathan and Claire Fowler are local Edwardsville residents and managing partners at Moussalli’s Prime. With strong ties to the Edwardsville community, Jonathan is the Vice President of J.F. Electric and a graduate of Southern Illinois University- Edwardsville. He and his wife, Claire, are honored to partner with the Moussalli family to bring this longtime dream to life.
