Farm-to-table concept Moussalli’s Prime will open this October at 7415 Illinois Route 143 in Edwardsville, as reported by The Edwardsville Intelligencer. The restaurant will enter the former home of Andria’s Countryside Restaurant, which resided on the 5-acre plot of land for more than 30 years. 

Jonathan and Claire Fowler now own the building, along with Antoine, André and Christian Moussalli, who served as the Andria's general manager for two years. 

André and Antoine Moussalli said the menu at Moussalli’s Prime will have some similarities to Andria’s Countryside. “It’ll still primarily be a steakhouse,” André said. “We’re using the Niman Ranch, certified Angus beef prime, all natural, which is kind of a big deal. There really isn’t a lot of it out there. That’s the same beef that Andria’s was using.”

The brothers said the menu will also include two fresh fish options and a raw bar that will include oysters, lobster tail, chilled shrimp and more. 

Additionally, they hope to have a strong menu for people who don’t want meat or seafood. “We have a lot of experience cooking that kind of food,” André said. “We’ve done a lot of vegan and vegetarian dishes, especially on the fly and paired with wine.”

The team is taking the farm-to-table aspect seriously; they intend to grow fresh fruit and produce, set up beehives, and possibly raise their own chickens. 

Moussalli’s beverage program is shaping up to be wine-focused. “We’re really heavy into wine,” Antoine said. “We’ve got a cellar capable of holding around $60,000 of inventory. A lot of them are big name California, Napa Valley wines.” The beer list will feature four to five craft beers on tap, as well as a lighter option like Bud Light. 

Moussalli’s Prime should seat around 100 people, and it will be open for dinner Monday through Saturday.
